I am still going strong on the GAPS diet, and am still feeling great. I usually crave a sweet snack in the middle of the afternoon, but regular ice cream is out of the question, unfortunately. The good news is that I finally created the perfect ice cream consistency and have been experimenting with different flavors. Matcha is naturally caffeinated, so it's a nice pick-me-up, and the homemade yogurt in the recipe offers some probiotics as well.
Ingredients for Matcha Ice Cream
4 ripe frozen bananas
1/2c homemade yogurt (get the recipe when you sign up for the YBC weekly newsletter)
2T matcha tea
Directions for Matcha Ice Cream
Put the yogurt, matcha tea and bananas in that order in a high powered blender (I used a Blendtec). If you're using a Blendtec, just press the ice cream button and let the magic happen. If you're using a different blender, just blender until creamy.
